Ingredients - 2 tbsp olive oil
- 1 red onion, chopped
- 1 zucchini, diced
- 1 carrot, diced
- 4 garlic cloves, chopped
- 4 Roma tomatoes, seeded and diced
- 1 28-ounce can crushed tomatoes
- 1 bay leaf
- 1 rosemary sprig
- 15 basil leaves, chopped
- Black pepper to taste
Instructions - Heat oil in a large skillet over medium heat. Add the onion, zucchini and carrot and sauté for 8 minutes. Add the garlic and sauté for about 1 minute.
- Add the tomatoes, bay leaf, black pepper and rosemary. Cook, uncovered for 15-20 minutes. Remove the bay leaf and rosemary sprig. Add the basil and add more seasonings if desired.
- Serve over cooked whole wheat pasta or use as a sauce for chicken.
